Dining with The Marriage Course // The Summer Edition

Award winning step-mum Louise Flamank is back at it again, whipping up a summer staple to show us how making a meal for the Marriage Courses is done.

 

This recipe is designed for a £2 per head budget, serving 10 people. For more guests multiply quantities to your requiremnts.

 

Chicken and vegetable tray bake

Ingredients (Serves  5 couples)

 

6 tbsp olive oil

10 chicken legs/thighs*

2tbsp dried mixed herbs

1 kg potatoes cut into large chunks

5 sweet potatoes cut into large chunks

5 red onions peeled and quartered.

6 garlic cloves crushed

6 large carrots cut into large chunks

4 chicken stock cubes

Salt and pepper

 

Method

1. Add all ingredients (except oil) to a large baking dish or 2 smaller ones spread out into an even layer in the pan(s).

2. Cover ingredients with the oil and mix well until coated. Add salt and pepper and roast at 200 c for 30-40 minutes until the chicken is cooked and  golden and the vegetables soft.

3. Serve with a fresh salad

 

*for a vegetarian option substitute chicken with broccoli
